SPINACH CORNBREAD 
1 box cornbread mix (or 2 pkgs.)
1 box frozen, chopped spinach, thawed and drained
6 oz. cottage cheese
1 stick butter, melted and cooled
1 onion, chopped
1/2 tsp. salt
4 eggs, beaten

Mix all ingredients. Pour in 8x13 inch pan or 9 inch iron skillet. Bake 30 minutes at 400 degrees.
