RICE KRISPY CHICKEN 
Chicken strips
Rice Krispies
Flour
Egg
Salt
Pepper
Cook ing oil (for frying)

Adjust ingredients for serving size.

Chicken strips must be deboned and skinned. Wash and pat dry. Prepare 3 bowls, 1 with flour, 1 with egg (beaten) and 1 with Rice Krispies (put in plastic bag and crush with rolling pin). Coat chicken with flour, dip in egg and coat well with Rice Krispies. In skillet, pour small amount of oil and over medium heat, fry chicken (approximately 2 to 3 minutes on each side). Add salt and pepper to taste while frying. Remove chicken and drain on paper towel.

Funny, I tried this recipe last night but I never looked up the recipe I just decided to try it because I had run out of crumbs and saw some left over Rice Krispies sitting in my pantry. If you ever want to throw out the left over cereal that turns into cereal %u201Cdust%u201D, keep it and use it for bread crumbs. I will be buying more Rice Krispies to make this again. The only thing I did differently is that I used chicken tenders (very easy) and seasoned them before I put them in the flour versus seasoning after everything is coated. This helps the chicken to season and gives it more flavor. I used salt, pepper and some poultry seasoning. It was so easy to make and it was a hit. I will definitely make this again. Husband and kids wanted more they absolutely loved it. Oh and I did use more frying time than 2-3 minutes, I don't trust chicken cooking in 2 minutes for each side. It was well coked and made the coating even crispier which makes the recipe more appealing. Do at least 5-6 minutes on each side and enough oil. Although I normally use olive oil for all my cooking, I prefer vegetable oil for frying or these types of recipes. Olive oil doesn't fry food as well as vegetable oil.
