STUFFED EGGPLANT 
1 eggplant
1 med. onion, minced
2 eggs
1/2 stick butter
Cracker or bread crumbs
1 lb. hamburger meat
2 cloves garlic, minced
2 slices bread, moistened and squeezed
Salt and pepper to taste

Cut eggplant in half. Boil in enough water to cover until eggplant is tender. Drain and cut out middle pulp. Add to mixture of browned and drained meat, onions, garlic, eggs, bread, salt and pepper. Melt butter in skillet on top of stove. Add mixture and cook for 15 minutes. Stuff shells with stuffing and sprinkle cracker crumbs on top. Bake until crumbs are golden in a 350 degree oven for about 30 minutes.
