1 1/2 c. sugar
1 c. butter
4 whole eggs
1 (1 lb. 5 oz.) pie filling (cherry, peach or blueberry)
2 c. sifted flour
1 tbsp. lemon extract

Cream sugar and shortening until fluffy. Add eggs one at a time, beating well after each addition. Slowly add flour, continue to mix well. Stir in extract. Pour into well greased 10 x 15 inch pan. Mark off 20-24 squares.

Place 1 tablespoon of filling in center of each square. Bake at 350 degrees for 45-50 minutes. Sift confectioners' over the top while still warm. Cut into squares. Serve plain or with cream or ice cream.
