ALSATIAN CASSEROLE 
2 (1 lb.) bags sauerkraut
3/4 lb. smoked ham
1 lb. Polish sausage
3 carrots, peeled and sliced fairly thin
2 lg. apples (Golden Delicious), peeled, cored and sliced about 1/4 inch thick
2 med. yellow onions, peeled and sliced thin
1 tsp. peppercorns
1 c. chicken or beef broth
1 c. dry white wine

Pam a 2 - quart casserole and set aside. Pour the sauerkraut into a colander, rinse well and allow to drain well. Dice the ham into fairly good - sized pieces. Cook the sausage according to directions, then slice in rather thick slices. Starting with half the sauerkraut, make a layer in the bottom of the casserole; add half the ham, half the sausage, half the carrots, half the apples and half the onions. Then repeat the layers. Scatter the peppercorns over the top of the casserole and, finally, pour the broth and wine over all. Cover tightly and bake in a preheated 350 degree oven for 2 hours. Serves 6.

Great fall dish. I used a spicy chicken sausage and ground ham loaf instead of the Polish sausage and smoked ham. The smoked ham would add a distinctive flavor but it wasn't in the pantry! Used Honeycrisp apple - a favorite. Very flavorful and warming!
