MIRLITON PIE 
3/4 c. cooked, mashed mirliton, drained
1/2 c. + 2 tbsp. sugar
2 eggs, separated
2 tbsp. butter, melted
1/2 c. evaporated milk
1/4 tsp. ginger
1/4 tsp. nutmeg
1/4 tsp. cinnamon
9-inch unbaked pie shell

Combine mirliton and sugar. Add well beaten yolks, butter, milk and spices. Beat egg whites until soft peaks form when beaters are lifted; fold into mirliton mixture.

Pour into pie shell. Bake in 450 degree oven for 10 minutes; reduce temperature to 325 degrees and continue baking for 30 minutes or until set.
