BAKED MIRLITONS WITH TASSO | |
2 tbsp. bacon grease 1 bunch leeks, chopped fine 8 oz. Tasso sausage, chopped fine 1 tbsp. garlic, chopped 1 tbsp. fresh parsley, chopped 6 fresh basil leaves, chopped or 1/1 2 tsp. dried 8 to 10 mirlitons (Vegetable Pears) 1 1/2 tsp. Vegetable Magic Salt & white pepper to taste 2 tbsp. Italian bread crumbs Boil mirlitons until tender. Cut in half and scoop out the inner seed. If skin is not too touch, slice the ends off and cut into chunk size pieces. Use bacon grease to saute leeks until just tender, add Tasso sausage and cook for 2 minutes. Add the garlic, parsley, basil, mirlitons, Vegetable Magic, salt and white pepper and stir well. Cook for 30 to 45 minutes, stirring occasionally. Mash mirlitons with spoon as you stir. Add bread crumbs and stir well. Put in casserole dish and top with a thin layer of the bread crumbs. Drizzle with butter and bake for 15 minutes. If cold, add bread crumbs and butter after you bake for 25 minutes, then bake for 20 minutes more. |
