BAKED VEGETABLE AND CHEESE FOR
ONE
 
1 med. carrot, thinly sliced (1 c.)
1/2 med. zucchini, thinly sliced (3/4 c.)
1/2 med. tomato, diced (1/2 c.)
1 1/2 tsp. minced parsley
1/8 tsp. Italian seasoning
1/8 tsp. salt
Sliced cheese

Preheat oven to 350 degrees. In 8 inch pie plate, layer carrot, zucchini and tomato. Sprinkle with parsley. Italian seasoning and salt. Cover with foil. Bake for 30 minutes or until vegetables are crisp-tender.

Meanwhile, cut cheese into 1/2 inch strips. When vegetables are crisp-tender, remove foil; arrange cheese strips to form a criss-cross design on veggies. Return to oven; bake until cheese is slightly melted, about 2 minutes.
