CATFISH CHOWDER | |
5 lbs. catfish 3 lbs. I-Potatoes, peeled & cut up 1 1/2 lbs. onions, peeled & cut up 1 can Pet milk 1 stick butter 3 slices bread, toasted 8 soda crackers Salt to taste 3/4 tsp. crushed red pepper 1/2 tsp. black pepper Tabasco sauce to taste Salt catfish and boil in small amount of water until tender, or will come off bones. Remove all bones. Do not pour out water fish were cooked in. While removing fish from bones, add potatoes, onions, milk and pepper to same water and boil until done. Add fish back in with potatoes and onions, add toasted milk and mash with potato riser until smooth consistency. Add Tabasco sauce and salt to taste. Add soda crackers to thicken. Should be about the consistency as grits. |
