COUNTRY BEAN SOUP 
2 c. dried (15) bean mix
3 qts. water
2 onions, chopped
2 (8 oz.) can tomatoes with juice
4 carrots, diced
2 ribs celery, chopped
1 lb. sliced smoked sausage
2 raw boneless chicken breasts chopped
Ham hock (this makes it country!)
Tabasco to taste, optional
1 tsp. garlic, optional or to your taste

Wash beans, place in large kettle, cover with 2 inches of water above beans. Add 1 tablespoon salt (optional). Soak Overnight. Drain in morning add 3 quarts water, meat, onion, garlic, Tabasco, salt and pepper t taste. Bring to a slow boil, cover and reduce heat to simmer for 2 1/2 to 3 hours. Add tomatoes, carrots, celery and simmer for 30 minutes more. Flavor improves with age and is best made "day before". Add 1/2 cup red wine for a little extra variety.
