FRENCH MARKET BEAN SOUP 
1 lg. pkg. of 15 bean mixture
3 qts. water
Ham bone
Bouquet garni
1 lg. can undrained tomatoes, chopped
2 c. onion, chopped
2 cloves garlic, minced
6 stalks celery, chopped
1 lb. thinly sliced smoked sausage
2 chicken breasts
2 chicken thighs

Wash and drain bean mixture. Add water, ham bone and bouquet garni. Simmer covered 3 hours. Add tomatoes, onion, garlic, celery. Salt and pepper to taste. Simmer 1 1/2 hours uncovered. Then add sausage and chicken. Cook until chicken is tender. Remove chicken bones and shread meat. Flavor improves with age. This soup freezes nicely.

BOUQUET GARNI:

1 tbsp. parsley
1 bay leaf
1 tsp. thyme
