BEAN SOUP (French Market) | |
1/4 c. each of 8 different beans or peas 1 lb. smoked sausage, cut up 1 lb. whole tomatoes 2 tsp. lemon juice 2 lg. ham hocks 1 lg. onion, chopped 2 cloves garlic, chopped Salt and pepper to taste Rinse beans, drain. Cover with water and soak overnight. In large kettle add 2 quarts water, ham hocks, and onions and cook for 2 hours. Remove bones and add remaining ingredients and simmer 1/2 to 1 hour until done. |
