TOMATO SAUCE 
2 tbsp. oil
1 lg. onion, chopped
2 to 3 cloves garlic, finely chopped
8 lg. tomatoes, cut in lg. chunks & blended until smooth
1 tsp. salt
1/4 tsp. pepper
1 tbsp. soy sauce
1 tbsp. honey
1 tbsp. chopped chives & parsley

Heat a large, heavy skillet on medium heat. Add oil, onions, garlic and saute until soft. Add blended tomatoes and other ingredients. Yield: 3 cups.

Simmer, uncovered, over low heat until bright red and thick. If too thin, cook a little longer or sprinkle 1 tablespoon of arrowroot powder or cornstarch. Let soften and stir and simmer 5 minutes more. Pack into canning jars and process. (May triple for tomato season.)

PIZZA SAUCE:

While sauteing, add 1/2 cup chopped mushrooms. Add 2 tablespoons oregano to other ingredients.

CHILI SAUCE:

While sauteing basic recipe, add 1 chopped green pepper and 2 or 3 chopped chili peppers. Add to other ingredients: 1 teaspoon dry mustard, juice of 1 lemon. Optional: 1 teaspoon cinnamon.
