NATURALLY GOOD PEANUT BUTTER
MUFFINS
 
1 c. unbleached flour
1 c. whole wheat flour
1 tbsp. baking powder
1/2 tsp. salt
4 tbsp. natural peanut butter
6 tbsp. safflower oil
1 1/2 c. milk
4 tbsp. maple syrup

Preheat oven to 350 degrees. Brush 18 muffin tins with oil. Combine dry ingredients in bowl. Add peanut butter and oil and mix until pebbly in texture (electric mixer or food processor). Add milk and maple syrup and mix until moist by hand. Spoon into muffin tins until 2/3 full. Bake for 15 minutes.
