PEANUT BUTTER & JELLY MUFFINS 
1 c. flour
1/4 c. sugar
1 1/4 tsp. baking powder
1/4 tsp. salt
6 tbsp. chunky peanut butter
6 tbsp. milk
1 egg
1/8 c. fruit preserves

1. Preheat oven to 400 degrees.

2. Combine flour, sugar, baking powder and salt in a mixing bowl.

3. Cut in peanut butter with fork until mixture resembles coarse crumbs.

4. Add milk and egg all at once, stirring just until flour is moistened.

5. Place 2 tablespoons of the batter in greased muffin cups.

6. Place 1 teaspoon of fruit preserves in center of batter and top with 2 tablespoons of batter.

7. Repeat making 6 muffins.

8. Bake in 400 degree oven for 15-17 minutes.
