FLOUNDER FLORENTINE | |
1 (10 oz.) pkg. frozen chopped spinach 1/2 c. shredded Mozzarella cheese 1 tbsp. grated Parmesan cheese 1 tsp. lemon juice 1/4 to 1/2 tsp. pepper 1/8 tsp. salt 1/8 tsp. leaf oregano, crumbled 2 fresh flounder fillets (7 oz. each) 4 tsp. butter 2 tsp. bread crumbs (optional) 1. Preheat oven to 350 degrees. Grease small shallow baking dish. 2. Stir together spinach, Mozzarella, Parmesan, lemon juice, pepper, salt and oregano in medium size bowl. 3. Halve each flounder fillets lengthwise, spread filling over each, dividing equally. Roll-up jelly roll fashion; secure each with wooden pick. Arrange seam side down in prepared dish. Dot each roll with teaspoon of the butter. Sprinkle with bread crumbs. (If using). 4. Bake covered in preheated oven (350 degrees) for 20 minutes, or until fish in center of roll just begins to flake when touched with fork and filling is hot. Carefully transfer rolls with metal spatula to serving plates. Discard toothpicks. Serve with whatever vegetable you like. |
