FLOUNDER FLORENTINE 
1 lb. fresh spinach, cooked
1 c. butter, melted
Juice from 1 lemon
1 c. seasoned bread crumbs
1 tsp. salt
1 tsp. pepper
1 c. dry white wine
1 lb. fresh flounder or sole fillets

Combine first 7 ingredients in bowl, stir well. Spoon mixture onto fish fillet. Roll up fillet and place on greased baking dish. Bake at 350 degrees 30 minutes.
