CREAM PIE-COCONUT OR CHOCOLATE 
2/3 c. sugar
1/4 c. cornstarch
1/3 tsp. salt
2 c. milk, scalded
3 eggs
2 tbsp. butter
1 tsp. vanilla
1 baked pie shell

Blend sugar, cornstarch and salt. Slowly stir in hot milk, cook and stir over boiling water until mixture thickens. Add 3 tablespoons of hot mixture to beaten egg yolks then stir eggs into custard. Stir and cook 2 minutes or until thick. Remove from fire; add butter.

COCONUT CREAM PIE:

Follow above recipe. Add 1/2 cup flaked coconut to custard before cooling mixture. Sprinkle meringue with 1/2 cup coconut then lightly brown. Follow recipe for cream pie.

CHOCOLATE CREAM PIE:

Add 2 squares baking chocolate or 1/2 cup cocoa to hot milk. Pour any above recipes into baked pie shell and cover with meringue and bake in slow oven until lightly brown.
