SWEET POTATO PECAN PIE | |
2 c. cooked mashed sweet potatoes 1/2 c. brown sugar 1/4 tsp. salt 1/4 tsp. cinnamon 1/2 c. granulated sugar 1/8 tsp. ginger 1/4 tsp. maple flavoring 4 eggs, lightly beaten 1 c. chopped pecans 1 unbaked 9 inch pie shell Preheat oven to 375 degrees. In large mixing bowl thoroughly combine potatoes, salt, spices, and flavoring. Add eggs: beat vigorously until combined. Stir in pecans. Pour into pie shell, bake for 45 minutes. Reduce heat to 325 degrees and bake for an additional 10 minutes. |
