SWEET POTATO PECAN PIE 
2 c. cooked mashed sweet potatoes
1/2 c. granulated sugar
1/2 c. brown sugar
1/4 tsp. salt
1/4 tsp. ginger
1/4 tsp. cinnamon
4 eggs, lightly beaten
1 c. pecans, chopped
1 (9 inch) unbaked pie shell

Preheat oven to 375 degrees. In large mixing bowl, combine potatoes, sugar, salt, spices, and flavoring. Add eggs and beat until combined. Stir in pecans. Pour into pie shell and bake for 45 minutes. Reduce heat to 325 degrees and bake for 10 minutes more.
