PAPER BAG APPLE PIE 
1 (9 inch) unbaked pie crust
6 c. tart cooking apples, peeled and sliced
1 c. sugar
2 tbsp. flour
1 tsp. lemon juice
1/2 tsp. cinnamon
Pinch of salt

TOP CRUST:

1/2 c. flour
1/2 c. firmly packed brown sugar
3 tbsp. butter

In large bowl toss apples with sugar, flour and lemon juice. Add seasonings. Put into pie shell.

Combine flour and brown sugar, cut in the butter with two knives or with pastry blender. Sprinkle evenly over apples.

Place pie in brown heavy paper bag. Fold over end twice, and seal with paper clips. Bake 50 minutes at 400 degrees. Do not open while baking. Remove from oven, and tear off the paper. Cut a hole first, so the steam can escape. Only use regular brown paper bags. Do not use recycleable bags.
