SKILLET MEXICAN HAMBURGER PIE 
The slightly sweet cornbread and the spicy meat make a delicious combination!

1 1/2 lb. ground beef, browned and drained
1/2 cup onions, chopped and sautéed
2 tsp. chili powder
1 (4 oz.) can diced green chilies
1 cup whole kernel corn
1 tbsp. chopped jalapenos (more if desired)
1 (10 oz.) can Rotel diced tomatoes
1 cup shredded Monterey Jack cheese
1 (8 1/2 oz.) pkg. cornbread mix (I use Jiffy)

Hamburger and onions may be cooked together in medium iron skillet. Drain well. Mix in next 6 ingredients. Level in skillet.

Make cornbread mix according to package directions and pour over the hamburger mixture. Place in 400°F oven till cornbread is done and lightly browned.

Remove skillet from oven and serve with dairy sour cream.

Prep time: 20 minutes; Bake time: about 25 minutes.
