CHICKEN WITH MUSHROOMS AND RICE 
1 1/2 lb. chicken breasts, boneless
2 tbsp. butter
1 can mushrooms
1 pkg. rice with broccoli
2 c. water
2 tbsp. butter
Lemon juice, optional

Melt butter. Cook chicken until no longer pink. Set aside and keep warm. Into skillet heat through mushrooms. Add 2 cups water. Rice package and butter. Bring to boil. Reduce heat and simmer 10-12 minutes or until rice is tender. To serve arrange chicken over rice. Sprinkle with lemon juice, if desired.
