CHICKEN WITH RICE & MUSHROOMS | |
2 tbsp. butter 1 c. sliced mushrooms 2 c. water 1 pkg. Lipton rice & sauce, Cheddar broccoli 1 lb. boneless chicken breasts, halved Serves 4 - 180 calories. Microwave Directions: In 2 quart casserole, microwave butter with mushrooms uncovered 1 minute. Stir in water and rice and sauce - Cheddar broccoli and microwave 7 minutes; stir. Arrange chicken over mixture. Microwave 7 minutes or until chicken is done, turning chicken once. Stove Top Directions: In medium skillet, melt butter and cook chicken until done. Remove and keep warm. Into skillet add mushrooms and cook 1 minute. Stir in water and rice and sauce - Cheddar broccoli and bring to boil. Reduce heat and simmer, stirring occasionally, 10 minutes or until rice is tender. To serve arrange chicken over rice mixture. |
