RED CABBAGE (SWEET AND SAUER) | |
1 head cabbage (red) 1/2 c. vinegar 1 med. onion, chopped 4 tbsp. bacon fat 1/3 c. sugar (brown) 2 tarty apples (core and slice) Core cabbage and remove outside leafs. Chop the cabbage until it is coarse. Use a skillet to cook the chopped onions in bacon fat until they are tender. Add cabbage and season to taste, then cover and steam for at least 10 minutes. Add 4 tablespoons of boiling water and the sliced apples, cover and simmer (low heat) for 1 hour (cabbage will become tender). Add sugar, vinegar cook another 1/4 hour. |
