TAPIOCA PUDDING 
4 tbsp. minute tapioca
4 tbsp. sugar
2 eggs, separated
3 c. milk
1/4 tsp. salt
1 tsp. vanilla or almond or combination
3 tbsp. sugar

Mix tapioca, sugar, milk, salt and egg yolks in a heavy saucepan. Let stand for 5 minutes. Cook over medium heat until mixture comes to a boil, stirring constantly. Remove from heat. Let cool slightly.

Beat egg whites and 3 tablespoons sugar until very stiff. Add a small amount of the hot mix to egg whites and blend well. Fold hot mix into egg whites. Blend well. Add flavoring and let cool.

You may add well drained, crushed pineapple to completed tapioca. Or serve with any fresh fruit or chocolate sauce.
