DIRTY RICE 
2 c. rice
1 lb. chicken livers
1 lb. chicken gizzards
Salt, black pepper and cayenne pepper to taste
1 sm. green pepper, chopped
4 green onions, chopped
1 sm. onion, chopped
6 cloves garlic, minced
1 lb. ground beef

Cook rice as per directions on box. Put chicken livers and gizzards into another pot, cover with water and simmer for about 15 minutes on medium heat. Add salt, black pepper, cayenne pepper, green pepper, green onions, half the chopped onion, and garlic, leaving lid off. Cook for about 20 minutes and then cut up livers and gizzards or grind them up. Put ground beef into pot, put livers and gizzards back into pot, and cook until done. Don't let all of the juices dry off. Put remaining onion into pot.
