BAKED LEMON PUDDING 
2 tbsp. butter
1 c. sugar
4 tbsp. flour
1/8 tsp. salt
3 tbsp. lemon juice
Grated rind of one lemon
3 eggs, separated
1 1/2 c. milk

Cream butter and then add sugar into it gradually. Add flour, salt, and the grated lemon rind and juice; then a mixture of the well beaten egg yolks and milk. Fold in the stiffly beaten egg whites, and pour into a baking dish. Set in a pan of boiling water, and bake at 375 degrees for approximately 45 minutes.
