CHERRY CHEESE CUPCAKES 
2 (8 oz.) pkgs. cream cheese
1 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
24 vanilla wafers
1 can prepared cherry pie filling
24 cupcake liners

Beat the first 5 ingredients with an electric mixer until smooth. Place one vanilla wafer in each cupcake liner, then fill each half full with the mixture.

Bake at 375 degrees for 15 minutes. Spoon cherry filling on top of each baked cupcake. Chill 1 hour before serving.
