CHEESE AND ONION PIE 
2 sticks + 2 tbsp. butter (divided)
1 1/2 c. soda crackers (crushed)
2 1/2 c. onions (sliced)
1 1/2 c. milk (scalded)
3 eggs (beaten)
1 lb. Cheddar cheese (shredded)
Salt and freshly ground black pepper (to taste)

Preheat oven to 350 degrees. Place 2 sticks butter in large pie dish and place dish in oven to melt butter. Remove dish from oven and add crackers; blend well. Carefully, so as not to burn yourself, press and spread mixture evenly to make a crust.

Melt remaining tablespoon butter in large skillet over medium heat. Cook onions until slightly brown. Spread onion mixture on the crust.

In a large mixing bowl, blend scalded milk and eggs, then add cheese and stir until melted. Season with salt and pepper. Pour egg mixture over onions and bake 45 minutes.

Be sure to use a BIG pie dish. I did not use a mixing bowl, I mixed it in the scalding pan. Used the pie for supper.
