CHEESE AND ONION PIE | |
2 sticks + 2 tbsp. butter (divided) 1 1/2 c. soda crackers (crushed) 2 1/2 c. onions (sliced) 1 1/2 c. milk (scalded) 3 eggs (beaten) 1 lb. Cheddar cheese (shredded) Salt and freshly ground black pepper (to taste) Preheat oven to 350 degrees. Place 2 sticks butter in large pie dish and place dish in oven to melt butter. Remove dish from oven and add crackers; blend well. Carefully, so as not to burn yourself, press and spread mixture evenly to make a crust. Melt remaining tablespoon butter in large skillet over medium heat. Cook onions until slightly brown. Spread onion mixture on the crust. In a large mixing bowl, blend scalded milk and eggs, then add cheese and stir until melted. Season with salt and pepper. Pour egg mixture over onions and bake 45 minutes. |
