RICE, ONION, CHEESE PIE 
1 c. cooked brown rice
1/2 c. low fat cottage cheese
1/2 c. shredded Mozzarella cheese
1/2 c. skim milk
1/2 c. diced onion
4 eggs
1 tsp. hot mustard (optional)
1/4 tsp. garlic powder
Onion flakes or powder (optional to taste)
Salt (optional to taste)

Preheat oven to 325 degrees. Put all ingredients in blender at high speed until creamy. Pour into ungreased glass pie pan. Sprinkle with parsley flakes, if desired for color. Bake in preheated oven for 45 minutes. Serve hot.
