ENGLISH CHEESE ONION PIE 
Lard or shortening
Flour
Water
Cheddar cheese
Onions, thinly sliced

Make a pastry from flour and lard using 1/2 the amount of lard to flour. Salt to taste. Add water, mix until soft and workable, not too soggy. Roll out on floured counter or board.

Place 1/2 the dough on greased pan. Place sliced cheese, the more the better and onion, then make a second layer of each. Then top with the other half of the dough. The dough should be 1/8 to 1/4 inch thick. Seal edges by pinching together. Prick with fork. Brush with milk. Bake about 375 degrees for 30 minutes.
