CHEESE ONION PIE | |
2 c. cheese Ritz crackers, crushed 1/2 c. melted butter 3 lg. onions, thinly sliced (about 3 c.) 2 tbsp. salad oil 1 c. milk 2 eggs, slightly beaten 1/2 c. grated Velveeta cheese Blend crumbs and butter; set aside 3 tablespoons for garnishing top of pie. Press remainder into 9 inch pie plate. Saute onions in oil about 10 minutes (but not brown). Spread onto pie crust. Combine milk, eggs, cheese, salt, and pepper (to taste) in pan. Heat very slowly until cheese melts. Pour over onions and sprinkle with reserved crumbs. Bake until center sets in a 325 degree oven, about 30 minutes. Let stand 5 minutes before cutting into wedges. Serves 6-8. |
