TOPAI (DUMPLINGS)
7 c. water
2 c. flour
3/4 c. water
1 c. coconut milk

(May use Bisquick for dough). Boil 7 cups of water. Mix 2 cups of flour with the remaining 3/4 cups of water. This mix should not be too soft. It should be similar to bread dough. Drop dumplings into the boiling water by teaspoon quantities. Keep water boiling so dumplings won't stick together.

Mix a little flour with more water to thicken. Add this to the boiling water with the dumplings. Bring to boil again and then add about cup of coconut milk and add sugar to taste. Add 4 tender leaves from a lemon tree to add flavor. Remove right away or the Topai will be over-flavored.

The children love this - Half and Half can substitute for coconut milk. Add vanilla or lemon extract for flavor is desired. This can be eaten as a breakfast hot dish for chilly mornings or cool as a dessert.
