CHICKEN IN BEER BATTER 
3 1/2 lb. chicken fryer, cut into pieces
1 tsp. salt
1/4 tsp. black pepper
1 c. flour
2 eggs
1/2 - 1 c. beer
2 tbsp. melted butter
2 tbsp. minced parsley
Fat for deep frying

Season the chicken pieces with the salt and pepper. Make a smooth mixture of the flour, eggs and melted butter. Then add as much beer as necessary to make a smooth rather than thick batter. Add the minced parsley. Coat the chicken pieces with the batter heavily and let chill 1 hour in the refrigerator. Heat the fat to 375 degrees and deep fry the chicken until golden brown. Drain and place in a shallow baking pan. Bake in a preheated 350 degree oven for 30 minutes or until tender. Serves 4.
