CHARCOALED CHINESE CHICKEN 
1/2 c. oil
1 tsp. grated lemon peel
1/4 c. lemon juice
1 tbsp. soy sauce
1/2 tsp. ginger powder
1 med. clove garlic, crushed
4 chicken breasts

In small bowl, mix well oil, lemon peel and juice, soy sauce, ginger, and garlic. Pour over chicken; marinate in refrigerator overnight, turning occasionally. Cook chicken over charcoal grill. Baste often and watch for burning (cook 15 minutes on each side). I cook mine 20 minutes on each side. Judge by size of chicken piece.
