CHINESE CHICKEN SALAD 
3 c. cooked chicken, cut up
1/3 c. salad oil
3 tbsp. lemon juice
2 tbsp. vinegar
1 tbsp. sugar
1/2 tsp. ginger
1 tsp. soy sauce
1 head lettuce, torn into small pieces
2 (11 oz.) cans mandarin oranges, drained
8 oz. can sliced water chestnuts, drained
3/4 c. chow mein noodles
2 tbsp. toasted sesame seeds (optional)

Combine cooked chicken, oil, lemon juice, sugar, soy sauce and ginger. Marinate 1 to 2 hours. Toss lettuce, mandarin oranges, chestnuts, chow mein noodles and sesame seeds with dressing. Serves 10 to 12.
