CARROT CAKE 
2 c. flour
2 tsp. baking soda
1 tsp. salt
2 c. white sugar
2 tsp. cinnamon
1 1/2 c. salad oil
4 beaten eggs
3 c. grated carrots
1/2 c. black walnuts

Mix together 2 cups flour, 2 teaspoons soda, 1 teaspoon salt, and 2 cups white sugar. Add in 1 1/2 cups salad oil and 4 beaten eggs. Add and beat in 3 cups grated carrots and 1/2 cup chopped black walnuts. Bake at 350 degrees for 35 to 40 minutes.

ICING:

1 (8 oz.) pkg. Philadelphia cream cheese
1 stick butter
1 lb. powdered sugar (3 3/4 c.)
1 tsp. vanilla
1/2 to 1 c. black walnuts

Blend Philadelphia cream cheese and butter together. Add powdered sugar, 1 teaspoon vanilla, and 1/2 to 1 cup of black walnuts.
