IMPOSSIBLE PUMPKIN PIE 
3/4 c. sugar
1/2 c. Bisquick mix
2 tbsp. butter
1 (13 oz.) can evaporated milk
2 eggs
1 (16 oz.) can pumpkin
2 1/2 tsp. pumpkin pie spice
2 tsp. vanilla

Heat oven to 350 degrees. Grease 9 x 1 1/4 inch or 10 1/2 inch pie pan. Beat all ingredients until smooth, 1 minute in blender on high or 2 minutes with hand beater. Pour into pie pan. Bake until knife inserted in center comes out clean, 50 to 55 minutes. Cool and serve with Cool Whip or a dollop of whipped cream.
