BLENDER CHEESECAKE 
1 1/2 c. graham cracker crumbs
1/2 c. butter, melted
1/2 c. boiling water
1 pkg. (3 oz.) lemon gelatin
2 tbsp. lemon juice
2 c. cottage cheese
1 container frozen topping (8 oz.)

Combine cracker crumbs and butter. Mix well. Press into bottom of 7x11 pan. Set aside.

Pour boiling water and gelatin into blender. Process at beat until gelatin is dissolved. Add lemon juice and 1 cup of cottage cheese. Cover and process to liquefy until smooth. Add remaining cottage cheese until smooth.

Pour into large mixing bowl and add frozen topping. Chill until set. This is ready to serve in minutes. Any flavor gelatin can be used in place of lemon.
