VIOLET JELLY 
Violet blossoms
1 lemon
1 pkg. sure-jel
1 bar paraffin wax
4 c. sugar

Fill any size jar with violet blossoms. Do not use wilted flowers as they look like bugs when the jelly is done. Cover with boiling water. Add a lid and let steep 24 hours. Strain the blue liquid through a cheesecloth-lined sieve. Discard the blossoms.

To 2 cups of the infusion, add the juice of 1 lemon and 1 package of powdered pectin (sure-jel). Bring to boil, then add 4 cups of sugar. Bring back to boil, boil hard for 1 minute. Pour into glasses and seal with wax (melted). Small wine glasses are very nice.

A lovely light-tasting jelly. Thanks for the recipe. It's beautiful and yummy. I used 1/4 c. lemon juice. And I didn't can it, since that is the annoying part of jelly making.
