MANICOTTI 
CHEESE FILLING:

1 qt. Ricotta cheese
2 eggs, beaten
1/2 tsp. basil
1/4 tsp. nutmeg (optional)
1 c. shredded Mozzarella cheese
2 tbsp. minced parsley
1/2 tsp. salt
1/8 tsp. pepper

Blend together all ingredients and stuff in uncooked manicotti shells.

MEAT FILLING:

1 1/2 lbs. hamburger, pork or veal
1/2 c. chopped onion
1/2 c. shredded Mozzarella cheese
1/2 c. Ricotta cheese
1/2 tsp. basil
1/2 tsp. salt
2 eggs, beaten
2 tsp. minced parsley
3 tbsp. minced garlic

Blend together all ingredients and stuff in uncooked manicotti shells.

I use either a purchased or homemade spaghetti sauce and pour 2 cups sauce on the bottom of a 12x17 inch baking dish and then place the filled Manicotti shells in the dish and pour 2 more cups of sauce over the shells and cover the dish with foil and bake at 375 for 1 hour. Then I put both Cheddar and Jack cheese slices over the cooked shells and place in the oven until brown. I then sprinkle Parmesan cheese (fresh) over the dish and serve. This is a big hit in my family.
