RUSSIAN-AMERICAN CHEESECAKE 
8 graham crackers
1 stick butter
1/4 c. sugar
2 (8 oz.) pkgs. cream cheese
1/2 c. sugar
2 tbsp. vanilla
1/2 c. heavy cream
2 eggs
1 c. sour cream
1 tbsp. sugar
1 tsp. vanilla
Berries, optional

Crush the graham crackers and mix with butter (room temperature) and the 1/4 cup sugar. Press into a pie pan and bake 5 minutes at 450 degrees.

Filling: Cream together the cream cheese and the 1/2 cup of sugar until soft. Add vanilla, heavy cream and 2 eggs, beaten. Mix together and pour into baked pie crust. Bake another 20 minutes at 350 degrees.

Topping: Mix the sour cream, the 1 tablespoon of sugar and 1 teaspoon of vanilla. Pour on top of the baked pie and bake an additional 5 minutes at 350 degrees. Top with berries, if desired, and refrigerate.
