SWEET POTATO SOUFFLE 
3 1/2 c. mashed sweet potatoes
2 c. sugar
4 eggs
1 1/4 sticks butter
1 c. evaporated milk
1 tsp. nutmeg
1 tsp. cinnamon
1 1/4 c. crushed corn flakes
1 c. chopped nuts
1 c. brown sugar
1 1/4 sticks butter

Combine potatoes, 2 cups sugar, eggs, 1 1/4 sticks butter, milk, nutmeg and cinnamon. Place in 2 quart casserole and bake in 400 degree oven for 20 minutes. Melt remaining butter and combine with corn flakes, nuts and brown sugar. Spread evenly over potato mixture and return to oven for 10 minutes.
