SWEET POTATO SOUFFLE | |
1 lg. can sweet potatoes (or 8 lg. fresh, baked or microwaved & skinned) 1/2 tsp. salt 1/4 tsp. cinnamon 1/4 tsp. nutmeg 1/4 c. butter 2 eggs 1 tsp. vanilla 1/2 c. sugar Whip everything together. Pour into buttered casserole. Top with the following: 3/4 c. brown sugar 3 tbsp. flour 1/2 c. pecan pieces Crumble and mix topping. Sprinkle on casserole. Bake at 350 degrees for 30-40 minutes. |
