SWEET POTATO SOUFFLE 
3 c. boiled mashed potatoes
1/2 tsp. salt
1/2 c. sweet milk
1/2 c. sugar
1/3 stick butter
2 eggs, beaten
1 tsp. orange flavoring

Fold in eggs. Pour into a greased baking dish. Cover with topping.

TOPPING:

1/2 c. brown sugar
1 c. nuts (chopped)
1/3 c. flour
1/3 stick butter

Mix well sugar and flour; sprinkle on souffle. Then pour melted butter over top. Cover with nuts. Bake at 350 degrees for 35 minutes.
