HARVEST CHOWDER 
1/2 lb. bacon
1 c. chopped onions
1 c. diced celery
1 c. diced potatoes
3 (40 oz. total) cans chicken broth or stock
1 c. frozen or canned peas
2 (16 oz. each) cans creamed corn
1 c. instant mashed potatoes
2 (12 oz. each) cans evaporated milk

Saute bacon in large pot. Remove, crumble, and set aside. Add onions, carrots, celery, and potatoes to 4 tablespoons bacon drippings and stir over high heat for 1-2 minutes. Add chicken broth and simmer for 20 minutes or until tender. Add peas and corn and instant potatoes and cook for 5 minutes. Add bacon. Finally add 2 cans of evaporated milk (12 ounces each).
