DOUBLE CHEESE POTATO BAKE 
3/4 c. seasoned dry bread crumbs
3 c. mashed potatoes
2 eggs
1/2 c. grated Parmesan cheese
8 oz. Mozzarella cheese, thinly sliced
2 tbsp. butter, softened

Sprinkle 1/4 cup of the bread crumbs in a greased shallow baking dish; set aside. Mix well mashed potatoes, eggs and Parmesan; spread half in prepared dish and top with Mozzarella slices; spread remaining potato mixture over cheese. Mix remaining bread crumbs with butter; sprinkle on top. Bake at 350 degrees for 50 to 60 minutes until crumbs are browned. Let stand a few minutes.
