DOUBLE CHEESE POTATO BAKE 
3/4 c. dry bread crumbs
3 c. mashed potatoes
2 eggs
1/2 c. Parmesan cheese
8 oz. shredded or thin sliced Mozzarella cheese
2 tbsp. butter, soft

Sprinkle 1/4 cup bread crumbs in greased 8" square baking dish. Mix together potatoes, eggs and Parmesan cheese; spread 1/2 in pan. Top with Mozzarella cheese, then remaining potato mixture. Sprinkle 1/2 cup bread crumbs on top, then melted butter. Bake at 350 degrees for 50 to 60 minutes. Let stand 15 minutes. Can be assembled day before and put in refrigerator.
