MINCEMEAT COOKIES | |
1 1/2 sticks butter (3/4 c.) 1 c. sugar 1 egg 1 tsp. grated orange peel or equal amount of undiluted frozen orange juice concentrate 1/2 tsp. vanilla extract 3 c. flour 1 tsp. ground cinnamon 1/2 tsp. baking soda 1/2 tsp. salt 3/4 c. mincemeat (from jar or reconstituted type) 1/2 c. chopped walnuts 1. In a large mixing bowl combine softened butter, sugar, egg, orange flavoring and vanilla. Beat at high speed of electric mixer until ingredients are thoroughly blended and fluffy. 2. Sift together flour, cinnamon, soda and salt; gradually stir into creamed mixture. Mixture will be crumbly, but don't add any more liquid. 3. Drain mincemeat it is too juicy; fold into cookie dough along with nuts. Shape dough into 2 rolls, about 1 1/2 inches in diameter. Wrap in waxed paper or plastic wrap and chill about 1 hour. Heat oven to 375 degrees; when ready to bake, slice rolls thinly with a very sharp knife. 4. Place cookies at least 1 inch apart on ungreased cookie sheet and bake in 7-10 minutes. Remove immediately to a wooden board to cool. Makes 5 dozen. |
